Ingredients:
- 4 TBSP (1/2 Stick) Butter
- 2 TBSP Extra Virgin Olive Oil
- 1 Medium Onion (Finely Chopped)
- Salt & Pepper (To Taste)
- 3 TBSP Tomato Paste
- 1 TSP Dried Thyme
- 2 Cans (14.5oz) Chicken Broth
- 2 Cans (28oz) Whole Peeled Tomatoes
Directions:
- In a quart Dutch Oven melt butter over medium heat; add oil and onion, season with salt and pepper. Cook until onion is translucent (about 5 minutes).
- Stir in tomato paste; cook 1 minute.
- Add thyme, broth and tomatoes; bring to a boil. Reduce heat and simmer 30 minutes. Break up tomatoes as it simmers.
- Using an immersion blender, puree soup in the pot, or use a blender. Make it as chunky or as smooth as you want it.
